Nana Pantone’s Swiss Chard Patties
Swiss Chard is a super food that is fast and simple to prepare and has limitless possibilities. It’s been noted to assist in decreasing the risk of obesity, diabetes, and heart disease. In addition, Swiss chard can enhance your complexion, increase energy and is an overall help in lowering weight.
According to many studies, one cup of cooked Swiss chard provides approximately 716% of vitamin K needs, 214% of vitamin A, 53% of vitamin C, 38% of magnesium, 29% of manganese, 27% of potassium, 22% of iron, 17% of vitamin E. Like beets, chard is also a unique source of phytonutrients called betalains. Those are a LOT of health benefits packed into one food! When chard is cooked by boiling, vitamin and mineral contents are reduced compared to raw chard, but still supply significant proportions of your recommended daily value.
Last Fall Chef David Pantone of Lincoln Culinary Institute in West Palm Beach, FL was invited to prepare his Swiss chard dish live on WPTV.
“My mother used to walk outside and pick fresh chard from her garden,” Chef Pantone says. “Within a few minutes all of her sons would be eating these patties hot out of the skillet. I’m not sure if any ever made it to a plate! This recipe is a big hit with kids, I hope you enjoy my mother’s recipe as much as we did!”
Swiss Chard Patties
Ingredients:
2 Cups Swiss Chard
1 cup bread crumbs
¼ cup Parmesan cheese
1 egg, lightly beaten
Salt and Pepper to taste
Olive oil to for cooking
Directions:
Clean, chop, and blanche chard. Drain and squeeze out excess water.
Place in a mixing bowl. Add bread crumbs, cheese, egg, salt and pepper and mix thoroughly.
Taste for seasoning.
Shape into 3” patties, about ½” thick.
Panfry in a little oil until lightly golden.
*Serve with either sour cream, hot sauce or warm apple sauce!
